On the Diabetes Plate, what fills half the plate?
Non-starchy vegetables get the biggest section.
- Non-starchy vegetables ✔
- Lean protein foods
- Whole grains and starches
Why: Non-starchy vegetables are lower in carbs, so they don't raise blood glucose very much. They also bring fiber, vitamins and minerals. Protein and carb foods each get one quarter.
Huh, didn't know that: ADA's list of non-starchy vegetables includes nopales (cactus), jicama and tomatillos.
Why did the tomato turn red? Because it saw the salad dressing.
