When cooking, what does ADA suggest using instead of butter?
Olive or canola oil.

Why: ADA recommends more monounsaturated and polyunsaturated fats than saturated fats. Cooking with olive or canola oil instead of butter, margarine or shortening is an easy swap.
Huh, didn't know that: Coconut and palm oils are high in saturated fat, even though they come from plants.
