SESK: Stuff Everyone Should Know · sesk.info/wood-olive-oil-rancid
Which common kitchen oil can turn rancid on a wooden cutting board?
Olive oil, a vegetable oil.
- Mineral oil
- Olive oil ✔
- Paraffin wax
Why: Vegetable oils like olive, corn, peanut and safflower feed microbes and can go rancid, giving the board bad odors and flavors. Mineral oil and paraffin wax do not spoil.
Huh, didn't know that: The handbook calls paraffin (candle) wax one of the simplest ways to finish wooden food items, applied by gently warming the board.
Would you ever consider going on the almond tree diet? No way, that's just nuts!
