Hunter education names three things that cause game meat to spoil. Heat, moisture and what?

Dirt. Keep the meat clean, cool and dry.

Why: Bacteria grow fastest when meat is warm, wet and dirty. Field dressing quickly, cooling the carcass and keeping hair and dirt off the meat all slow spoilage.

Huh, didn't know that: Hunter education suggests placing a small bag of ice inside larger game birds, like turkeys and geese, to chill them.
